Prepared by master chefs known as Wazas, cooked over night on slow firewood in tin-coated copper cauldrons (Degs), and served in large royal brass platters called Trami for 4 guests.

Course 1 โ€ข Starters ๐Ÿ–

Seekh Kabab & Tabak Maaz

Minced mutton grilled on hot skewers, paired with crispy steam-cooked and ghee-fried lamb ribs (Tabak Maaz) with crackling crust.

Course 2 โ€ข Red Gravy ๐Ÿฒ

Rista (Saffron Meatballs)

Silken meatballs hand-pounded on stone with walnut mallets, simmered in a fiery red gravy coloured naturally with Kashmiri dried cockscomb flower (Mawal).

Signature: Hand-pounded tender texture
Course 3 โ€ข Aromatic ๐Ÿ›

Rogan Josh (The King Course)

Tender bone-in mutton pieces cooked in clarified ghee, Kashmiri chillies, asafoetida, and shallot paste (Pran). Zero onion or garlic in traditional waza style!

Course 4 โ€ข Yogurt Base ๐Ÿฅฃ

Yakhni & Daniwal Korma

Delicate lamb cuts simmered slowly in thick curd infused with green cardamom, cloves, and mint leaves, followed by coriander-fragrant Daniwal Korma.

Flavour: Tangy, soothing, aromatic yogurt
Course 5 โ€ข The Grand Finale ๐Ÿ‘‘

Gushtaba (The Messenger of Peace)

The final dish of Wazwan. A giant velvety meatball in a velvety yogurt gravy spiced with dried mint. Once Gushtaba is served, no more savory dishes follow!

Phirni & Halwa

Ground semolina and rice pudding set in earthen clay pots (Shikoras), scented with Kishtwar saffron and topped with silver leaf (Vark) and slivered almonds.

Ramnagar & Udhampur Kaladi

An artisan ripened cheese made from raw cow/buffalo milk by Gujjar-Bakerwal pastoralists. Pan-fried in its own natural fat until the outside is golden crispy and the inside is gooey, melted, and stretchy. Served with spicy mint-anardana chutney in toasted local buns.

Bhaderwah Rajmash & Chawal

Grown in the high-altitude valleys of Bhaderwah (Doda), these tiny reddish-maroon kidney beans are naturally sweet and melt-in-the-mouth without soaking soda. Cooked in pure mustard oil with hing and dried pomegranate seed powder (Anardana), served over aromatic rice with pure desi ghee.
